Whence the name?
This old family recipe originates from the Upper Silesian region of Germany and derives its name from the German Schokoladenfisch, meaning Chocolate Fish. They have always been made in fish-shaped molds. My family has always considered this confection a favorite treat to be indulged in with company. Because it keeps indefinitely, my mother habitually stores a portion in the refrigerator as a safeguard for unexpected visitors. (As children, my sisters and I knew all about that stash, and could usually manage to sneak a little piece from the chilled reserve.)
Quality
Over the years I have upgraded the recipe to reflect discriminating tastes
and now make the Fisch using premium ingredients: top-quality Belgian chocolate and
marzipan, California almonds, and cherries from Michigan.
As the crafter of a Vermont product I take pride in small-batch
production and attention to detail to assure the highest quality possible.
